2018 - Balsamic Honey Pork Fillet

Balsamic Honey Pork Fillet

1 pork fillet

1 tsp oil

Salt and freshly ground black pepper

2 tblspn balsamic vinegar

2 tblspn honey

2 tsp fresh thyme, finely chopped, or 1/2 tsp dried

1 clove garlic, crushed

 

Preheat oven to 200 deg c.

Massage oil, salt and pepper into pork fillet and place in baking dish. Tuck tail end of fillet under and secure with a toothpick. Bake for 8 minutes.

Meanwhile, whisk together the rest of the ingredients in a small bowl. Brush over the meat and cook for a further 12 to 15 minutes, brushing meat once more during this time.

Serve with roasted cherry tomatoes and steamed asparagus. Drizzle with remaining pan juices.
