2018 - Crunchy Honey Nut Granola

4 cups oatmeal

1 cup pecan nuts

1 cup sliced almonds

1/2 cup pumpkin seeds

1 cup long thread coconut

1 tblspn cinnamon

1 tsp vanilla essence

1/2 cup honey

1/3 cup coconut oil, melted


Pre heat oven to 150 deg c.

Stir all dry ingredients except coconut in a large bowl. Combine honey, coconut oil and vanilla and add to dry ingredients, mixing well. Scatter over 2 large baking trays and bake for 10 minutes. Add coconut and stir .

Bake for a further 10 - 15 minutes until golden brown. When completely cooled, add dried fruit such as diced apricots, currants, or chocolate chips.

Store in an air tight container.

Serve with greek yoghurt and fresh fruit.
