2017 - Crunchy Honey Garlic Chicken

Crunchy Honey Garlic Chicken

4 boneless, skinless chicken breasts
1 cup flour
2 tspn salt
2 tspn black pepper
1 tblsp ground ginger
½ tblsp ground nutmeg
1 tspn dried thyme
1 tspn dried sage
1 tblsp paprika
½ tspn cayenne pepper
2 eggs
4 tblsp cold water

SAUCE
1 tblsp olive oil
3 cloves garlic, finely chopped
½ cup Mana Kai Raw Honey
2 tblsp soy sauce
½ tspn black pepper

Prepare chicken breasts by slicing them into halves horizontally. In a medium sized bowl, mix flour and all the other dry ingredients. In another bowl, whisk the eggs and water together. Dip the chicken into the flour and spice mix, coat well, then dip into the egg mix. Dip again into the flour and spice mix, pressing to ensure there is a good coating. Chicken can be either fried or baked.
For frying, cook in 1 cm of oil over a medium heat for 4-5 minutes per side.
For baking, oven needs to be pre-heated to 210C, with baking tray in oven. Spray oil on hot tray and add chicken. Pieces should not be touching each other. Spray top of chicken with oil and cook 15 min, then turn over and cook for a further 10 min.
While chicken is cooking, heat oil and gently fry garlic for a minute. Add honey, soy sauce and pepper. Simmer 5 minutes then leave to cool for a few minutes.
Dip the cooked chicken into the sauce. Sprinkle with sesame seeds and coriander leaves if desired, and serve with rice or noodles and Asian greens.
